1. This miso was prepared with Enray soybeans from Nagaoka, Niigata Prefecture, Koshihikari rice from Niigata Prefecture, and domestic salt.
This is Echigo rice koji miso that made use of the sweetness of Koshihikari rice cake in the same amount as rice.
The rice is made with rice for 3 days to make a rice koji, and soy is boiled over time, so it features a soft and moist miso.
2. It is a koji grain miso characterized by a shade between red and white. Salinity 11.9%
3. Satisfies the standards of “additives” and “ginjo”.
Additives are brewed using only soybeans, rice, salt, seed koji and fermenting bacteria, and other ingredients, carryover and processing aids are not used.
