Suzutomi has traditionally adopted a freezing technology called "proton freezing", which has been found to be very effective in improving the freezing quality of fresh fish. Although we have delivered stable and high-quality products using this technology, there are some problems that cannot be solved by this "proton freeze" technology. This time, we changed to a method of rapid freezing using "3D freezing" after pre-cooling with "prime zero". As a result, we are able to deliver even higher quality and easier products.
